Fat Cow

Our cows are born locally here in Wyoming and Montana, raised in grass here in Wyoming, and processed at a USDA facility in Sheridan, WY with attention to detail and passion for great meat.We have our own herd of Scottish Highland Cows and also source cattle from surrounding Highland Cattle ranchers who believe in our standards of excellence and raise their herd in the same way we do.

  • Raised and Produced With Care

    Highland cattle are slow-growing, they spend their first 2.5 years grazing on native grasses before we initiate the process of supplementing their diet with locally sourced grains from Wyoming and Montana. This natural diet aids in their growth and marbling which creates steady weight gain, which our cattle naturally love. When it's time for processing, we work with a locally owned Wyoming USDA processing facility.

    Our meat is dry aged for 7 to 24 days, adapting to the unique moisture content and leanness of the animal.

    I've always loved Highland beef but it's hard to get high quality. Ranchers here don't treat Highland as a delicacy so they don't raise it right. When it's raised, finished and cut correctly it's a very nice meat. It's a lean Waygu. Full of flavor but not too fatty. Fat Cow Ranch does it right.
